It is during these long days of winter when the slow cooker shines. Here, a simple soup of cabbage and pork is slow cooked for hours so it is ready to be served with salad and bread on a week night when the light is low, and the furnace is on.
Simple Cabbage Soup with Peppery Pork Meatballs
Serves 6 to 8
- 1/2 head of cabbage
- 2 medium potatoes, cubed
- 1 large carrot, grated
- 1 tablespoon brown sugar
- 1/2 teaspoon whole black peppercorns
- 1/2 teaspoon salt (optional)
- 1 bay leaf
- 6 cups of chicken broth (2 cartons)
- 1/3 to 1/2 pound ground pork
- 1/2 teaspoon freshly ground pepper
Combine all the ingredients except the pork in the slow cooker. Cook on LOW 6 to 8 hours or on HIGH for 3 to 4 hours. Mix the ground pepper and pork and form into small meatballs. Add to slow cooker and cook and additional hour or until cooked through.
TIP: Make the pork meatballs the night before so when you get home from work you can throw them into the slow cooker while you're making the salad and setting the table.
