With iced-coffee drinks all the rage in Canada these days, it’s not surprising that bartenders across the nation are experimenting with java-infused beverages. And with cold brew coffee being touted as the next big thing, artisanal companies are starting to spring up everywhere. Among them is Bubba’s Cold Brew Coffee Company helmed by Bubba Nicholson and Mark Wanamaker, and based in Burlington, Ontario. Not only did I have the pleasure of penning a story about Bubba's and all things cold brew for the Fall issue of Hamilton Magazine (on newsstands now) but I also got to sip my way through these fabulous concoctions created by Haldimand bartender, Brenda Lee. More recipes, created by other bartenders in the region, are posted on Bubbascoldbrew.com

Si! Si! Si!

A lip-smacking blend of chocolate, chili-pepper infused vodka and cold brew coffee.

  •  1 oz creme de Cacao (light or dark)
  •  1 oz chili pepper infused vodka
  •  4 oz Bubba's Cold Brew coffee

Build in rock glass with ice. Stir and enjoy.

Garnish: Get creative! Add a wedge of chili chocolate or melt the chocolate and then drizzle on a frozen swizzle stick. You can make your own swizzle stick by dipping a popsicle stick into the melted chocolate and then freezing.

To make infused vodka: Pour vodka into a 500 mL maison jar. Pierce one red Thai chili pepper with a fork. Place in jar with vodka, stir with a spoon gently pressing pepper to the side of jar to express its oils until the desired heat is attained. It won't take long (about 5 minutes) but be careful because this pepper is hot!

Bubba-rita

Coffee notes impart an exceptionally refreshing change-up to the the traditional margarita.

  • 1 1/2 ounces of tequila
  • 1/2 oz Triple Sec
  • 1 oz limejuice
  • 1/2 oz agave syrup
  • 3 oz Bubba's Cold Brew Coffee

Shake with ice and pour into a margarita glass rimmed with orange wedge and salt. The orange will subtly enhance the coffee flavour and give the drink a deeper body.

Garnish with lime and orange slices.
